Broccoli and Mint Soup
Recipe: Evan der MillnerMicrowave loosely chopped broccoli for 5 minutes or until tender.
Add to a pot with 500 mL of water.
Slake 1 teaspoon of sweet potato flour in cold water, and add to the pot.
Pepper and salt to taste
Add a tablespoon of mint leaves (dried or fresh)
Add rosemary and a pinch of mace.
Pour in 1/4 cup olive oil, and blend everything together with a hand blender.
Bring to the boil. Simmer for 2 minutes.
Add more water if needed, until it reaches the desired consistency.
Serve.
